Long Row ..Part 6







Welcome Back!!  This is it!    This is the last week  to hit my deadline.  The goal started out,  losing 20 pounds and gaining my sobriety.  I started "Long row to hoe" at 153 lbs and drinking regularly. Where am I now, six weeks later?  I'm 136lbs and drinking on the weekend, so it seems.   This week, I did better on the diet, then the sobriety.   I could tell you, I was celebrating my success as a parent.    Maybe that I was pressed,  by an enabler.  Those would be excuses.  No excuses!!  I drank!  I enjoyed BBQin' with friends and had some drinks.  Did I get trashed?  Nope!  Am I proud, of where I am?  Indeed!! 
  I wasn't sure that I would make it,  June the 7th,  seemed so far away.  I do have to mention, dress shopping, felt great!  It was nice to put on a dress and look good.  To go from a size Large to a size medium,  is priceless. 


I'm going to continue this journey, It's not over .   I still have 3 days to lose 3lbs. I truly want to hit this goal.  Next week, I plan to post my before and after picture.  To continue blogging updates,  In hopes I'll keep the weight off and the drinking to a minimum.   I might even try to lose another 10lbs.... We shall see.

Taco Dip

Taco Dip



Great for any Party. 

2 Large cans refried beans
1 Large sour cream
1 Packets of Taco seasoning
1/2 cup chopped Tomato
1 Large bag of Taco cheese
1 can sliced Olives
1/2 Cup chopped Scallions/ Green onion
Spread Refried bean in large dip tray - or casserole dish 
Mix taco seasoning into sour cream - Make sure to mix completely
Spread sour cream over refried beans
cover with Cheese, olives, chopped tomato  chopped Scallion -

Grab a bag of your favorite tortilla chips and enjoy!

Chicken Bryan..... Copycat ♫ ♪♫





















  Use kitchen mallet to  flatten the thick part of the chicken breast ..rub each chicken breast with oil sprinkle each with salt and pepper  grill for 3-5 minutes per side or until done  


 Basil lemon butter sauce : 
 1/2 cup butter (1 stick) 
 1 teaspoon minced garlic
 2 teaspoon lemon juice
 1 tablespoon white wine
 1/8 teaspoon salt 
 1/8 teaspoon white pepper
 1/4 cup heavy cream 
 6-7 basil leaves sliced


Melt butter in a small saucepan over med/low heat -add garlic  and saute (sweat) it for 5 minutes   add the lemon juice and wine  cook for another 5 minutes add salt pepper and cream and reduce the heat to low cook sauce for 15-20 minutes over low heat until think, stirring often while grilling chicken.
 While chicken is cooking simmer the sun-dried tomatoes in a small saucepan of boiling water for 3-4 minutes . strain the tomatoes then slice into strips 
 When Chicken is done . Place each chicken breast on a plate and place a slice of cheese Caprino ( or any goat cheese) on  top of each chicken breast. divide the sun-dried tomatoes and place pile on top of the chicken on each plate . Stir the basil leaves into the sauce then spoon the sauce over the chicken and serve. Serves 4    Worth the work.. it's amazing!!

Long Row ...Part 5

      Word of the week, Discouraged!!   I'm so discouraged,  my loss this week.... 2 pounds and half an inch.  I have 8 pounds to lose, to hit my goal.  I'm starting to think, It's not going to happen.  I only have TEN days.  I thought maybe, I would get close and be ok with that result.  I can't say I've ONLY lost 12 pounds because,  that is great.   however, It took me 5 weeks to lose that 12 pounds.   I know this week and next, I'll be pushing myself at the gym.  I didn't try the red wine vinegar trick,  I may pick some up today and start that.  I think,  I'm also discouraged because,  I had someone ask me, " Are you seeing results,  from not drinking?"    I guess, I'm the only one to notice my weight loss.  It makes me want to eat an entire red velvet cake.  alright,   Not really. 


Saturday,  I went out for a friends birthday, I had a couple drinks. I drank, scotch and diet soda. which is still sticking to the diet.  I read,  on this diet you can have Scotch, rye, vodka. With a non- sugar drink,  NO JUICE.  You' re also allowed red wine,  in moderation,  of course.  I can't say that,  I'm at the social drinker status.  But I have to pat myself on the back. I'm doing better then I thought, in that area.

Long row... part 4

Here I am,  two weeks from my deadline.  My goal is to lose 20lbs by June 7th. As well as keep my sobriety. Unfortunately, I feel like I'm stuck. The last two pounds, I lost was last week.  I'm not sure to add more vegetables,  or cut out more carbs.   The carbs, I am taking in are from Ranch dressing, I keep it under two teaspoons.   I'm eating more of the same things.  Hot dogs with mustard,   For dinner, Meat i.e. Pork chop, steak, chicken.  with salad. I drink, nothing but water with Mio.  I do sneak a little peanut butter, now and again.  Believe me, it's not enough to make a difference.   I'm jogging a mile at least 3 to  4 times a week, along with inclined sit-ups.

The Upside!!  I'm doing better with my sobriety, then I am with my diet.  Which is great!!
I really don't think much about drinking, I guess because I'm so focused on losing this weight. June 7th is  an important day to me, I want to look great,  as well as feel great.  Though, I can't say,  on said day,  I wont have a couple cocktails.  However,  I hope to keep it to a minimum. I hope that I can do it. If I feel I can't, I just wont drink.  Easier said then done, right?  I just hope that I don't go back to, where I was. Eating the same bad foods, the same bad habits, and drinking each night.

Before I bring myself down.  I need to focus on these last 10lbs. I would love tips. :)
I have been told to drink, red wine vinegar with water, anyone else heard of that?   I haven't tried it yet.  Though, I think I will start that, this Friday,  and report back.

Happy National Chocolate Chip Cookie Day!

... I'll share my favorite cookie recipe  No Bake Cookies

Ingredients

  • 1 3/4 cups white sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 4 tablespoons unsweetened cocoa powder
  • 1/2 cup crunchy peanut butter
  • 3 cups quick-cooking oats
  • 1 teaspoon vanilla extract

Directions

  1. In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

" A Long row... part 3

          Here we are again, yet another week has pasted us by.  Time to report my week.  I'm pretty reluctant to say .... Saturday and Sunday,  I did have a couple drinks.  I had one and a half drinks, Saturday and, Four drinks Sunday.  I know,  I didn't FAIL,  though,  I did trip up.  It's only been two weeks. How could I give in so easy?  Shame on me,  I know.

  Saturday,  I was at a party,  the only one,  not drinking.  I had one shot of Patron,  a half of Margarita Crystal Light & Patron.  Something, I can have on the diet.  So I didn't break my diet,  just my sobriety.  Lame,  I know!  If it's worth it,  I felt guilty.

Needless to say, I'm still on the diet.  I wasn't sure,  I was going to lose anything this week.   I checked so often, My husband said, he was going to take the batteries out of the scale.  Lately I've been, longing for baked goods. not so much bread,  as much as, I yearn for cake.   I'm still on target for the 20lb loss.  This week,  I lost another 4 pounds and  2inches.  12 more pounds to go.  3 more weeks, to do it.

I hope that all the Mom's ( in some cases, Dad's),  had a wonderful Mother's Day.  I sure did!!  I woke to Cheese omelets, sausage and bacon.  as well as the best gifts and so much love.
